Guineafowl is situated between chicken and pheasant in terms of taste and size, it is slightly gamey and has a darker, drier flesh. 

Equally fantastic wrapped in bacon and roasted or braised in a hunters stew or curry.

When cooking guineafowl be careful as due to its low fat content it can dry out!
