Finest lamb cuts
New Seasons Lamb tends to come from the North and West whilst the Salt Marsh from farms in the East. We also source lamb from Scotland.
Our matured Lamb is selected from farms renowned for using traditional techniques and skilled stockmanship to consistently produce the finest quality lamb. We buy whole Lambs and age them for an additional 7 -10 days in as this is the optimum length of time to mature the meat, resulting in a wonderful texture as any excess moisture will have evaporated.
On our own farm in Perthshire we have settled on a Texel breed which thrives on our pastures consuming grass and heather. There will be increasing quantities of this lamb in the years to come.
